One Pot Pasta Beef Stew
Serves 15
Simple dish to feed a crowd!
  1. 1-1/2 lb Malfalda (Mini Lasagne), Egg Noodles, or medium noodles
  2. 3 lbs lean beef, cut into 1-inch cubes
  3. 1-1/2 large onion, chopped
  4. 4 carrots, scraped and sliced diagonally into 3/4-inch-thick ovals
  5. 1 sweet red pepper, cut into 1/2-inch strips
  6. 1 lb small fresh mushrooms, cleaned
  7. 4 tomatoes, cut into wedges
  8. 3 cup beef base
  9. 2 bay leaf
  10. 1/2 cup fresh parsley, chopped
  11. 1/2 teaspoon hot red pepper flakes
  12. Salt, as needed
  13. 3/4 teaspoon black pepper
  14. 3 cup frozen peas, thawed
  1. In a large heavy pot, combine beef, onion, carrots, red pepper, mushrooms, tomatoes, wine, bay leaf, parsley and red pepper flakes. Cover and simmer over low heat for 1 1/2 hours, stirring occasionally. Stir in salt, black pepper and pasta. Cover and cook 10 minutes, stirring occasionally. Add peas and stir to mix. Serve hot.
