Cajun Rice

Ingredients
  1. Onions, diced 1 large
  2. Peppers, green, diced 1 large
  3. Butter ½ cup
  4. Cajun spice 1 tsp
  5. Granulated garlic 2 tsp
  6. Liquid smoke 1 tsp
  7. Black pepper 1 tsp
  8. Chili powder 2 tsp
  9. Ground red pepper 1 tsp
  10. Cumin 1 tsp
  11. Chicken or beef base 1 Tbsp, 1 tsp
  12. Smoked sausage 1 lb
  13. Rice, parboiled, raw 4 cup
  14. Water 8 cups
Instructions
  1. 1. Saute onions and peppers in butter for about 5 minutes.
  2. 2. Add spices to sautéed onions and pepper. Cook about one minute.
  3. 3. Cut sausage into ½ inch slices, add to onion & spice mixture. Saute for 4-5 minutes.
  4. 4. Add rice to mixture; stir well for 2-3 minutes. Add water, bring to a boil; stir; place on a tight fitting lid. Reduce heat to low. Let cook for 18-20 minutes.
Notes
  1. Holds well, make ahead and reheat.
  2. • Cook in a 4 inch ½ pan or in a 1-1/2 gal pot
