Twice Baked Meatballs
This is a great dish the whole family will love!

Ingredients
  1. 1-1/2 lbs. ground chuck
  2. 1 eggs, beaten
  3. 1/2 cup onion, chopped finely
  4. 2 cloves garlic, minced
  5. 1/4 cup grated Romano cheese
  6. 1/4 cup ground red pepper
  7. 1/2 tsp cinnamon
  8. 1 cup Italian bread crumbs
  9. 3/4 cup milk
  10. salt, pepper (1 tsp salt, about, and 1/2 tsp. pepper)
  11. SAUCE
  12. 1/2 cup onions, finely chopped
  13. 1/4 cup sweet peppers, finely chopped
  14. 1 Tbsp sweet basil
  15. 1/4 tsp Oregano
  16. 1 Tbsp Brown sugar
  17. 1/2 tsp Pepper
  18. 1 tsp Salt
  19. 4 garlic cloves, diced
  20. 3 Tbsp Butter
  21. 1/2 to 3/4 cup chicken stock
  22. 1-26 oz can Crushed tomatoes w/puree
Instructions
  1. Mix all ingredients at once until completely mixed. Shape into meatballs,you can use an ice cream scoop.
  2. Choice your cooking method
  3. In a rectangular pans in the oven, cooked at 400 degrees. Remember to drain the fat off of the pan.
  4. Sauce
  5. Saute onions and pepper in butter. Add herbs, cook 2 minutes.
  6. Add beef stock and tomatoes. Cook for 10-15 minutes.
  7. . Pour hot sauce over meatballs, cover; bake at 400F for 25 minutes
Notes
  1. You can make these meatballs the day ahead and refrigerate. Bring out and place in a casserole dish. You can also freeze the meatballs. Bring them out of the freezer and let thaw before using.
