Ingredients
- Turkey, thawed or fresh 12 lbs
- Salt As needed
- Pepper As needed
- Butter 1/2 cup
- Celery, cut 3 inches 5-6 stalks
- Onion, cut in quarters 1 medium
Instructions
- Preheat oven to 350°F.
- Melt butter, rub butter over turkey sprinkle with salt and pepper.
- Place turkey on a rack, in a pan with at least 2 inch sides. Place celery and onions in turkey cavity. Cook ½ hour uncovered. Place foil loosely over turkey, cook for about 2-1/2 hours or until the built-in thermometer pops up or quick-read thermometer reads
- 165°F. Let stand for 15-20 minutes before carving.

- Save space in the kitchen and cook the turkey on the grill. Using a gas grill preheat to 300°F, place turkey covered with foil. Cook about three hours.
- Place a couple of sheets of foil under the pan to prevent the pan from getting so smoked up
