rest or let stand
This is not talking about that guest that you don’t offer a
seat to. Rest or Let stand refers to the time you allow a
cooked food item to stand, or left along to rest. The time
varies but 10 -20 minutes is the usual time frame. This is
very important in roasted meat dishes, lasagna, souffles and
meat loaf. If a roast is cut right out of the oven, you will
loose a lot of the natural juices, making the meat dry.
