Parmigiano- Reggiano cheese is a hard, fat granular cheese, cooked
but not pressed, named after the producing areas of Parma, Reggio,
Emilia and other local regions of Italy. Parmigiano is the Italian
adjective for “Parma”, The French pronunciation is “ Parmesan” and
is used in the English language.
Note for the Chef: for the best flavor and dining pleasure, buy wedges
of hard Parmesan cheese from your local grocery store and grate it
your self. Stay away from pre-grated Parmesan in the jar.
