Live Well Coleslaw
A delightful fresh salad!

Ingredients
  1. 4 c. Cabbage, shredded
  2. 1 sm. Carrot, grated
  3. 1 sm. Onion, chopped
  4. 1/4 c. Celery, sliced
  5. 1/4 c. Low fat plain yogurt
  6. 2 tbsp. Light mayonnaise
  7. 4 tsp. White vinegar
  8. 1 tsp. Dijon mustard
  9. 1/2 tsp. Granulated sugar
  10. 1 dash Salt
  11. 1 dash Pepper
Instructions
  1. In bowl, toss together cabbage, carrot, onion and celery. In small bowl, stir together yogurt, mayonnaise, vinegar, mustard, sugar, salt and pepper. Stir into cabbage mixture; toss well.
  2. Coleslaw can be refrigerated in airtight container for up to 2 days.
  3. Variation: add chopped sweet pepper, small broccoli florets or any other vegetables
  4. you have on hand.
