
Grilled Cheeseburgers

The skies the limit when creating a great burger!!

Ingredients
- Fresh ground chuck 1-1/2 lbs
- Salt & pepper To taste
- Assorted slice cheeses 4 each
- Hamburger or kaiser rolls 4 each
Instructions
- Divide ground chuck into 4 equal portions
- Press each patty out; using 2 sheets of wax paper and a glass pie plate. Press until 6 inches round.
- Sprinkle lightly with salt & pepper.
- Heat grill to 500F. If using charcoal, get the heat to a 3 second hand count.
- Grill burgers for 5-6 minutes on each side (for medium well)
- Remove and plate burgers.
- Top with cheese and other toppings.
Notes
- Great topping ideas: assorted lettuces, sauteed onions, bacon, grilled mushrooms, grilled onions, grilled ham, pineapple rings, avocados, spinach, hot peppers.

The only place I can find that hints at making burgers the Rochester (Tom Wahl’s, Bill Grays, Shaller’s, Don and Bob’s, etc) way with the glass pie plate. Any chance you ever worked at any of those places and learned the technique there? Would love to hear your story on how where you learned this technique of making burgers.
I no longer live in the state but in the (infrequent) chance I get back to Rochester it always includes a visit to a ‘real’ Rochester burger joint of old.

Yes I grew up in Palmyra NY, Right of high school (in 1977), I managed the “Coal Tower Restaurant” in Pittsford, NY. The Coal Tower at that time was owned by the same man that owns “Orbakers Drive-In” (Hwy 104) in Williamson, NY.
I worked with them for about 16 months, until I went to culinary school in the fall of 1978.
I worship in a FWB church in Kinston, NC
