German Chocolate Cake

Ingredients
  1. Cocoa powder 3/4 cup
  2. Oil, vegetable 1/4 cup
  3. Water, hot 1/2 cup
  4. Margarine or butter 1 cup
  5. Sugar, granulated 2 cups
  6. Eggs, fresh 4 each
  7. Vanilla 1 tsp.
  8. Flour, A. P. 2-1/4 cup
  9. Salt 1/2 tsp.
  10. Baking soda 1 tsp.
  11. Buttermilk 1 cup
  12. ( or 1 cup milk, 1 tbsp white vinegar)
  13. GERMAN CHOCOLATE CAKE ICING
  14. Pecan & Coconut Icing
  15. Evaporated Milk 1/2 can or 6 oz
  16. Sugar, granulated 1-1/2 cups
  17. Butter or margarine 3/4 cup
  18. Egg yolks 4 each
  19. Vanilla 1-1/2 tsp.
  20. Coconut, shredded 2-2/3 cups
  21. Pecan pieces 1-1/2 cups
Instructions
  1. Mix together cocoa, oil and water.
  2. Cream butter, sugar and cocoa mixture together, 3-4 minutes.
  3. Add one egg at a time, add vanilla.
  4. Sift dry ingredients, add to batter. Add buttermilk, mix for 2 minutes.
  5. Bake in 3 - 9 inch (greased or papered) round cake pans. Bake for 25-30 minutes at 350°F.
  6. ICING
  7. Mix all ingredients except nuts and coconut into sauce pan & cook 12 minutes, stirring constantly. Add nuts & coconut & beat until mixture is of spreading consistency.
