Ingredients
- Cocoa powder 3/4 cup
- Oil, vegetable 1/4 cup
- Water, hot 1/2 cup
- Margarine or butter 1 cup
- Sugar, granulated 2 cups
- Eggs, fresh 4 each
- Vanilla 1 tsp.
- Flour, A. P. 2-1/4 cup
- Salt 1/2 tsp.
- Baking soda 1 tsp.
- Buttermilk 1 cup
- ( or 1 cup milk, 1 tbsp white vinegar)
- GERMAN CHOCOLATE CAKE ICING
- Pecan & Coconut Icing
- Evaporated Milk 1/2 can or 6 oz
- Sugar, granulated 1-1/2 cups
- Butter or margarine 3/4 cup
- Egg yolks 4 each
- Vanilla 1-1/2 tsp.
- Coconut, shredded 2-2/3 cups
- Pecan pieces 1-1/2 cups
Instructions
- Mix together cocoa, oil and water.
- Cream butter, sugar and cocoa mixture together, 3-4 minutes.
- Add one egg at a time, add vanilla.
- Sift dry ingredients, add to batter. Add buttermilk, mix for 2 minutes.
- Bake in 3 - 9 inch (greased or papered) round cake pans. Bake for 25-30 minutes at 350°F.
- ICING
- Mix all ingredients except nuts and coconut into sauce pan & cook 12 minutes, stirring constantly. Add nuts & coconut & beat until mixture is of spreading consistency.
