Ingredients
  1. CHICKEN
  2. 4 - 6 EA CHICKEN QUARTERS
  3. AS NEEDED SALT
  4. AS NEEDED PEPPER
  5. GEORGIA GRILLING SAUCE
  6. 1/2 CUP BUTTER
  7. 1 CUP ONIONS MINCED
  8. 1/2 CUP YELLOW MUSTARD
  9. 1 EA LEMON JUICE FRESH SQUEEZED
  10. 1/4 CUP KETCHUP
  11. 2 TBSP WHITE VINEGAR
  12. 1/2 TSP CAYENNE PEPPER OR 4 TSP HOT SAUCE
  13. 1/2 TSP SALT
  14. 1/2 CUP WATER
Instructions
  1. CHICKEN
  2. SEASON CHICKENS WITH SALT AND PEPPER, CHILL FOR 1-2 HOURS. GRILL, SKIN SIDE UP, FOR 1-1/2 HOURS ON LOW HEAT, ABOUT 275-300F. (CAN BE BAKED IN OVEN)
  3. GEORGIA GRILLING SAUCE
  4. IN A NON-ALUMINUM SAUCE PAN, WARM THE BUTTER OVER MEDIUM HEAT. ADD ONIONS AND SAUTE UNTIL TRANSLUCENT AND VERY SOFT, ABOUT 5 TO 7 MINUTES.
  5. MIX IN THE REMAINING INGREDIENTS, REDUCE THE HEAT TO LOW, AND COOK THE MIXTURE 10 ADDITIONAL MINUTES.
  6. USE THE SAUCE WARM. (KEEP IT COVERED AND REFRIGERATED, FOR SEVERAL WEEKS, BUT REHEAT BEFORE USING.)
  7. GRILLING
