Ingredients
- CHICKEN
- 4 - 6 EA CHICKEN QUARTERS
- AS NEEDED SALT
- AS NEEDED PEPPER
- GEORGIA GRILLING SAUCE
- 1/2 CUP BUTTER
- 1 CUP ONIONS MINCED
- 1/2 CUP YELLOW MUSTARD
- 1 EA LEMON JUICE FRESH SQUEEZED
- 1/4 CUP KETCHUP
- 2 TBSP WHITE VINEGAR
- 1/2 TSP CAYENNE PEPPER OR 4 TSP HOT SAUCE
- 1/2 TSP SALT
- 1/2 CUP WATER
Instructions
- CHICKEN
- SEASON CHICKENS WITH SALT AND PEPPER, CHILL FOR 1-2 HOURS. GRILL, SKIN SIDE UP, FOR 1-1/2 HOURS ON LOW HEAT, ABOUT 275-300F. (CAN BE BAKED IN OVEN)
- GEORGIA GRILLING SAUCE
- IN A NON-ALUMINUM SAUCE PAN, WARM THE BUTTER OVER MEDIUM HEAT. ADD ONIONS AND SAUTE UNTIL TRANSLUCENT AND VERY SOFT, ABOUT 5 TO 7 MINUTES.
- MIX IN THE REMAINING INGREDIENTS, REDUCE THE HEAT TO LOW, AND COOK THE MIXTURE 10 ADDITIONAL MINUTES.
- USE THE SAUCE WARM. (KEEP IT COVERED AND REFRIGERATED, FOR SEVERAL WEEKS, BUT REHEAT BEFORE USING.)
- GRILLING
- DIP CHICKEN IN SAUCE, PLACE BACK ON GRILL, LET COOK 5 MINUTES, REPEAT. REMOVE FROM GRILL, ENJOY!!DI
