Cornbread Muffins

Ingredients
  1. Flour A.P. sifted 1 cup
  2. Cornmeal, yellow 1-1/2 cups
  3. Baking soda 1 tsp.
  4. Baking powder 1 tsp.
  5. Salt 2 tsp.
  6. Shortening 1/4 cup
  7. Eggs 2 each
  8. Sour milk or milk & 2 tbsp vinegar 2 cups
Instructions
  1. Sift dry ingredients together, cut in shortening until mixture is course like meal. Combine eggs and milk; stir into flour/cornmeal mixture. Bake 20-25 minutes in greased muffin pans at 425°F.
