Cornbread Dressing
Yields 1
Great side dish for turkey or chicken
  1. Celery, fine diced 1 cup
  2. Onions, fine diced 1 cup
  3. Butter 3 Tbsp.
  4. Cornbread, course crumbs 1 pan
  5. (made from 2 boxes of jiffy cornbread mixes)
  6. Black pepper 1/4 tsp.
  7. Poultry Seasoning, ground 1/4 tsp.
  8. Swanson’s Chicken Broth 3 cups
  9. Eggs, whole, beaten 3 each
  1. Saute celery and onions in butter until tender.
  2. Combine cornbread, pepper and poultry seasoning. Toss lightly.
  3. Pour sauteed vegetables over bread mixture; toss lightly.
  4. Mix stock and eggs together; pour over cornbread mixture; mix lightly but thoroughly. Place in well greased pan. Bake at 350°F for 30 minutes or until top is lightly browned and dressing in firm.
