Chicken Wonton Soup
A good fresh flavored soup with a sausage & cheese wonton!
  1. Water 3 cups
  2. Chicken thigh, boneless 1 each
  3. Chicken base 1/2-3/4 tsp
  4. Black pepper 1/2 tsp
  5. Green onion, sliced into rings 1 each
  6. Making the wontons
  7. Wonton wrappers 10 each
  8. Cream cheese, softened 1 oz
  9. Ground sausage, hot 1 oz
  10. Cheddar cheese 1/2 oz
  11. Ground red pepper 2 pinches
  1. Bring water to a boil, add base and pepper, stir well. Add chicken thigh and simmer until done.
  2. Place a small scoop of mixture in the middle of each wrapper, about the size of a large marble.
  3. Fold the wonton by, wetting the outer edge of the wrapper. Fold into a triangle, press wrapper to seal, let air escape for one side. With your finger, push the center of the folded side in slightly. Bring the 2 triangle ends under the center and seal together.
  4. Remove chicken, dice chicken and set aside for 10 minutes. let broth simmer to reduce for 10 minutes.
  5. Add chicken and 1/2 of green onions, adjust seasonings.
  6. Place wontons in broth, (do not stack), cover and simmer on low heat 5-8 minutes.
