Chicken Chow Mein

Ingredients
  1. 4 - 6 OZ CHICKEN BREASTS SLICED
  2. 1 TBSP OLIVE OIL OR VEGETABLE OIL
  3. 1 CUP BEAN SPROUTS OPTIONAL
  4. 1 4 OZ CAN MUSHROOM PIECES DRAINED
  5. 1 7 OZ CAN SLICED WATER CHESTNUTS DRAINED
  6. 2 CUPS COOKED CUT UP CHICKEN
  7. 3 TBSP CORNSTARCH
  8. 1/4 CUP WATER
  9. 1 10 OZ CAN CONDENSED CHICKEN BROTH
  10. 1/4 CUP SOY SAUCE
  11. AS NEEDED hot cooked rice
  12. AS NEEDED CHOW MEIN NOODLES
Instructions
  1. SAUTE CHICKEN STRIPS UNTIL JUST DONE.
  2. IN A LARGE POT, SAUTE CELERY IN OIL FOR APX 5 MINUTES OR UNTIL CRISP-TENDER.
  3. ADD BEAN SPROUTS (IF USING), MUSHROOMS, WATER CHESTNUTS, AND CHICKEN.
  4. IN A LARGE BOWL, BLEND CORNSTARCH WITH WATER. WHEN SMOOTH, ADD CHICKEN BROTH AND SOY SAUCE TO BOWL. MIX WELL AND POUR OVER MEAT AND VEGETABLES.
  5. BRING TO A BOIL, STIRRING UNTIL SAUCE THICKENS. REDUCE HEAT TO LOW. COVER AND SIMMER 10 TO 15 MINUTES.
  6. SERVE OVER HOT, COOKED RICE AND CHOW MEIN NOODLES.
