Beef Enchiladas

Ingredients
  1. Ground beef 1 lb
  2. Taco Seasoning packet 1 ea
  3. Enchilada Sauce
  4. Butter 1 Tbsp
  5. Flour, A.P. 1 Tbsp
  6. Water 1-1/2 cup
  7. Chili powder 1/2 tsp
  8. Cumin 1/4 tsp
  9. Black pepper 1/4 tsp
  10. Salt 1/4 tsp
  11. Tomato sauce 8 oz
  12. Tortilla shells, 10 inch 4 ea
  13. Mexican cheese 1 cup
Instructions
  1. Brown beef, drain grease. Follow instructions on seasoning packet.
  2. In a sauce pan melt butter, add flour, mix well
  3. Add water to the butter-flour mix, add spices, mix well, let cook for 5 minutes.
  4. Add tomato sauce, cook on medium speed for 5 - 10 minutes
  5. Assembling
  6. Place a ladle of enchilada sauce in the bottom of a casserole dish.
  7. Place a scoop of seasoned ground beef in a floured tortilla shell, roll up. Place in casserole dish.
  8. Ladle sauce over tortillas, top with cheese, bake for 5 minutes or until cheese is melted.
