Spaghetti Alla Carbonara
Great authentic recipe !!
  1. Spaghetti, thin 1 lb
  2. Bacon, thick sliced if possible 1/2 lb
  3. Onions, very thin sliced or finely chopped 2 Tbsp. ( 1/ 2 small)
  4. Parmesan cheese wedge, grated 1 cup
  5. Eggs 4 ea
  6. Heavy cream 1/2 cup
  7. Extra virgin olive oil 1/2 cup
  8. Salt & pepper To taste
  1. In a large pot, boil 1 gal water. Add 1/2 tsp. salt.
  2. 2. While the water is boiling , dice onions and cut the bacon into thin strips. In a fry pan heat the olive oil and add the bacon. Cook the bacon until crisp ( not burn). Just before the bacon is ready add onions to the bacon and cook until tender.
  3. 3. Remove onions and bacon from the hot oil, move the hot oil off the stove until ready to use later.
  4. 4. Add the spaghetti to the boiling water, cook to desired doneness.

  6. Timing is very important with this dish from this point. What we are about to do is drain the hot spaghetti , stir in raw eggs, Please follow recipe closely

  8. 5. In a small bowl, add eggs, beat well, add 1/2 cup of Parmesan cheese and heavy cream, mix well.
  9. 6. When the spaghetti is done drain the water and return it to the pot. Very quickly add eggs, cheese and cream mixture and mix well. Heat the oil until very hot, when it is hot pour and stir into spaghetti, mixing well. Add bacon and onions, mix well. Serve immediately , sprinkle with remaining Parmesan cheese.
