Smokey Honey-Peppercorn Glaze for Poultry

Ingredients
  1. 1/3 CUP HONEY
  2. 1 TBSP KETCHUP
  3. 1/2 TSP COARSLEY GROUND BLACK PEPPER
  4. 1/4 TSP LIQUID SMOKE
  5. 1/8 TSP CRUSHED RED PEPPER FLAKES
  6. 1/8 TSP SALT
  7. 1 WHOLE 3 -5 LB CHICKEN (OR SMALL TURKEY)
Instructions
  1. IN A SMALL BOWL, COMBINE ALL INGREDIENTS EXCEPT CHICKEN UNTIL WELL BLENDED.
  2. PLACE CHICKEN IN ROASTING PAN; BRUSH WITH GLAZE. ROAST AT 350F, BRUSHING WITH ADDITIONAL GLAZE EVERY 15 MINUTES UNTIL THE CHICKEN IS DEEP-GOLDEN BROWN AND CHICKEN JUICES ARE CLEAR. (1-1/4 HOURS TO 1-1/2 HOURS ON AVERAGE)
  3. LET STAND FOR 15 MINUTES BEFORE CARVING.
