Rainbow (Pepper) Stir Fry with Chicken

Ingredients
  1. 2 EA MARINATED CHICKEN BREASTS CUT INTO 1- 3 INCH STRIPS
  2. 1/2 EA YELLOW BELL PEPPERS THIN STRIPS
  3. 1/2 EA ORANGE BELL PEPPERS THIN STRIPS
  4. 1/2 EA GREEN BELL PEPPERS THIN STRIPS
  5. 1 MED VIDALIA ONION THIN STRIPS, LENGHTWISE
  6. 2 CLOVES GARLIC FINELY MINCED
  7. AS NEEDED BLACK PEPPER
  8. AS NEEDED SALT
  9. 2 TBSP OLIVE OIL
Instructions
  1. CUT PEPPERS, ONIONS AND MINCE GARLIC IN A HEAVY SAUTE PAN OVER MED-HIGH HEAT, ADD OIL. PLACE MINCED GARLIC IN HOT OIL STIR UNTIL LIGHT BROWN, ADD PEPPERS AND ONIONS, SEASON AS DESIRED. COOK FOR 1-2 MINUTES, REMOVE FROM PAN.
  2. COOK CHICKEN (MEAT CHOICE) TO DESIRED DONENESS. WITH SMALL CUTS OF MEAT, ADD THE PEPPERS BACK TO PAN AND STIR FOR A FEW SECONDS. SERVE OVER RICE OR NOODLES.

  1. YOU CAN USE BOSTON BUTT STEAKS, PORK MEDALLIONS, SHRIMP AND A GRILLING STEAK., MARINATE OR SEASONED.
