Pumpkin Black Bean Chipotle Soup
This is a great blend of flavor, has a chili flavor.

Ingredients
  1. Black Beans, drained, rinsed 1-15 oz can
  2. Chicken Broth 2-1/2 cups
  3. Onion, fine diced 1 each
  4. Celery, fine diced 1/2 cup
  5. Pumpkin, canned, 100% pure 1-15 oz can
  6. Chipotle, ground 1/2 tsp
  7. Cumin, ground 1-1/2 tsp
  8. Salt to taste
  9. Garlic, granulated 1/2 tsp
  10. Butter 3 Tbsp
Instructions
  1. Saute onions and celery in butter until translucent. Add drained beans and spices, with well, cook 4-5 minutes.
  2. Combine pumpkin with the chicken broth, mix well.
  3. Add the pumpkin/broth mixture to the beans.
  4. Bring to a boil, reduce to a simmer. Simmer for 30-45 minutes uncovered, stirring occasionally
Notes
  1. Great with sour cream and cheese as garnish.
