What is a grinder?, you ask! Same as a submarine sandwich or a hero sandwich!

I will try this recipe but I’m not sure if it will turn out like the sauce for grinder sandwiches I remember as a teenager growing up in West Covina. There was a sandwich shop in Covina called The Grinder. Not sure if the web site for a place called Gene’s Grinder on Arrow Highway is the same place (now closed). But, I’ve ever since wanted a Grinder sandwich with that oil based sauce they put on the sandwiches. Was unique and so, so good.
I remember oil being dribbled on the bread before the rest of the ingredients but don’t know what was in it. I didn’t remember seeing bits of aoo the ingredients above but perhaps it was only the oil that was used? I am 81, and a GRINDER was Italian Bread, seasoned oil, shredded lettuce, tomatoes, provolone cheese & salami. Remember we could order hard salami or regular salami. Was years later before other types of grinders were offered. Miss my original grinders.
