Grilled Zucchini & Yellow Squash
A healthy way to eat your squash.

Ingredients
  1. Zucchini, about 6 inches 1 each
  2. Yellow Squash, about 6 inches 1 each
  3. Butter, melted 1 Tbsp
  4. Olive oil 1 Tbsp
  5. Salt & pepper As needed
  6. Granulated garlic As needed
  7. Basil leaves, dry 2 tsp
Instructions
  1. Wash and dry vegetables well. Slice the zucchini and squash lengthwise into 3 sections each.
  2. 2. Mix butter and olive oil together and brush liberally on both sides.
  3. 3. Sprinkle the first side with ½ of basil and salt, pepper & garlic to taste. Turn over and repeat on other side.
  4. 4. Preheat grill to 450°F, grill vegetables for 3 minutes on each side. Serve immediately.
  5. Note: you can replace the basil with 1 tsp cumin and ½ tsp ground red pepper. Other options is to add 1 tbsp of hot sauce to the butter and olive oil mixture. One other that is very tasty is to sprinkle with Parmesan cheese before grilling.
