Ingredients
- 3/4 CUP BUTTER SOFTENED
- 1 1/2 CUPS SUGAR
- 3 LG EGGS
- 1/2 TSP VANILLA
- 1 CUP FLOUR
- 1/3 CUP UNSWEETENED COCOA POWDER
- 1/2 CUP PECANS OR WALNUTS CHOPPED
- 1 14 OZ CAN SWEETENED CONDENSED MILK
- 1 CUP COCONUT
- CHOCOLATE ICING
- 2 CUPS POWDERED SUGAR
- 1/4 CUP UNSWEETENED COCOA POWDER
- 1 TBSP BUTTER MELTED
- 3 - 4 TBSP MILK OR AS NEEDED
Instructions
- PREHEAT OVEN TO 250F. GREASE A 13X9X2-INCH BAKING PAN. SET ASIDE.
- FOR CHOCOLATE LAYERS: IN A LARGE MIXING BOWL, BEAT BUTTER WITH ELECTRIC MIXER ON MEDIUM SPEED TO HIGH SPEED FOR 30 SECONDS. ADD SUGAR. BEAT UNTIL COMBINED, SCRAPING SIDES OF BOWL OCCASIONALLY. BEAT IN EGGS AND VANILLA. BEAT IN FLOUR AND COCOA POWDER UNTIL COMBINED. STIR IN NUTS. SPREAD MIXTURE IN PREPARED PAN. BAKE FOR 30 MINUTES.
- FOR COCONUT LAYER: IN A SMALL MIXING BOWL, COMBINE SWEETENED CONDENSED MILK AND COCONUT. SPREAD OVER CHOCOLATE LAYER. RETURN TO OVEN AND BAKE FOR 15-20 MINUTES OR UNTIL TOPPING IS GOLDEN AROUND EDGES. COOL IN PAN ON WIRE RACK.
- CHOCOLATE ICING
- IN A MIXING BOWL, COMBINE POWDERED SUGAR, COCOA, BUTTER AND 3-4 TBSP OF MILK. MIX WELL WITH ELECTRIC MIXER. ADD MORE MILK IF NEEDED, TO MAKE SPREADABLE.
- SPREAD CHOCOLATE ICING OVER UNCUT BARS, LET STAND 10 MINUTES. CUT BARS.
