Chilled Broccoli Salad
This dish has become very popular over the last few years
  1. Broccoli florets 4 cups
  2. Bacon, fresh, cooked crisp 5 - 6 strips
  3. Golden raisins 1/2 cup
  4. Walnuts 1/4 cup
  5. Onion, green, cut small 1/4 cup
  6. Salt & Pepper 1/4 tsp each
  7. Dressing
  8. Salad dressing, reg or low fat 1/4 cup
  9. Plain yogurt, reg or low fat 1/4 cup
  10. Sugar, reg or splenda 2 tbsp
  11. Vinegar, red wine or balsamic 2 tbsp
  1. In a bowl place broccoli, raisins and onions, sprinkle with salt and pepper, toss well.
  2. In a separate small bowl, combine dressing ingredients, mix well. Pour dressing over broccoli, toss well. Move broccoli salad to serving bowl, crumble bacon, sprinkle on top. Refrigerate for 1 to 2 hour. When ready to serve sprinkle with walnuts.
  3. NOTE: Halved green or red seedless grapes, your choice of colored raisins can be substituted. Course shredded carrots will add a little color and flavor.
