Ingredients
- 1 TBSP OLIVE OIL
- 1 MED ONION CHOPPED
- 1 STALK CELERY CHOPPED
- 2 CLOVES GARLIC CRUSHED
- 1 LB CHICKEN TENDERLOINS
- 1/4 CUP CHICKEN BROTH
- 1 LB MUSHROOMS SLICED
- 1 CAN CREAM OF MUSHROOM SOUP
- 1/4 CUP LIGHT SOUR CREAM
- 2 TBSP PARSLEY CHOPPED
Instructions
- HEAT OIL IN A LARGE HEAVY BASED SAUCEPAN. COOK CHICKEN UNTIL BROWNED, REMOVE FROM PAN.
- SAUTE ONION AND CELERY UNTIL SOFT, ADD GARLIC AND COOK A FURTHER MINUTE, ADD MUSHROOMS, LIGHTLY SAUTÉ.
- ADD CHICKEN STOCK, COOK ABOUT 2 MINUTES.
- ADD SOUP AND SOUR CREAM AND SEASON WITH PEPPER (CHECK FOR SALT). COOK UNTIL WARMED THROUGH.
- SPRINKLE PARSLEY OVER FINISHED DISH. SERVE WITH RICE OR PASTA.
