Chicken & Mushroom Casserole

Ingredients
  1. 1 TBSP OLIVE OIL
  2. 1 MED ONION CHOPPED
  3. 1 STALK CELERY CHOPPED
  4. 2 CLOVES GARLIC CRUSHED
  5. 1 LB CHICKEN TENDERLOINS
  6. 1/4 CUP CHICKEN BROTH
  7. 1 LB MUSHROOMS SLICED
  8. 1 CAN CREAM OF MUSHROOM SOUP
  9. 1/4 CUP LIGHT SOUR CREAM
  10. 2 TBSP PARSLEY CHOPPED
Instructions
  1. HEAT OIL IN A LARGE HEAVY BASED SAUCEPAN. COOK CHICKEN UNTIL BROWNED, REMOVE FROM PAN.
  2. SAUTE ONION AND CELERY UNTIL SOFT, ADD GARLIC AND COOK A FURTHER MINUTE, ADD MUSHROOMS, LIGHTLY SAUTÉ.
  3. ADD CHICKEN STOCK, COOK ABOUT 2 MINUTES.
  4. ADD SOUP AND SOUR CREAM AND SEASON WITH PEPPER (CHECK FOR SALT). COOK UNTIL WARMED THROUGH.
  5. SPRINKLE PARSLEY OVER FINISHED DISH. SERVE WITH RICE OR PASTA.
