Breaded Chicken & Bananas

Ingredients
  1. 1 CAN CONDENSED MILK
  2. 1/3 CUP MILK
  3. 1/2 CUP FLAKED COCONUT
  4. 6 EA FIRM BANANAS CUT LENGTHWISE
  5. 3 CUPS CORN FLAKES CRUMBLED
  6. 2 WHOLE FRYING CHICKENS CUT INTO PIECES
  7. 3/4 CUP BUTTER OR MARGARINE MELTED AND DIVIDED INTO 2 PORTIONS
  8. 1/4 CUP LEMON JUICE
  9. AS NEEDED SLICED STAR FRUIT AND KIWI FRUIT OPTIONAL
Instructions
  1. IN FOOD PROCESSOR, BLEND THE CONDENSED MILK, COCONUT, AND LEMON JUICE UNTIL SMOOTH. POUR INTO A BOWL.
  2. DIP BANANAS INTO MILK MIXTURE; ROLL IN THE CORN FLAKES AND SET ASIDE.
  3. DIP CHICKEN INTO REMAINING MILK MIXTURE; ROLL IN THE REMAINING CORN FLAKES AND PLACE IN TWO GREASED 13-INCH BY 2-INCH BAKING PANS.
  4. SPRINKLE WITH 1/2 CUP OF THE MELTED BUTTER. BAKE, UNCOVERED, AT 350 DEGREES FOR 1 HOUR. ARRANGE BANANAS OVER THE CHICKEN. SPRINKLE WITH THE REMAINING BUTTER.
  5. BAKE 15 MINUTES LONGER OR UNTIL CHICKEN JUICES RUN CLEAR. GARNISH WITH STAR FRUIT AND KIWI IF DESIRED.
