Baked Ham with Waldorf Sauce

Ingredients
  1. 1 4 pound smoked boneless ham
  2. 2 cups apple juice or apple cider
  3. 1 stick cinnamon (2 inches)
  4. 1/2 cup sliced celery
  5. 1 tablespoon butter or margarine
  6. 1 cup chopped apple
  7. 1/4 cup coarsely chopped walnuts
  8. 2 tablespoons raisins
  9. 1 tablespoon brown sugar
  10. 4 teaspoons cornstarch
  11. 1 tablespoon water
Instructions
  1. Place ham on rack in shallow roasting pan. Bake in a 325ºF oven for about 1-1 1/2 hours or until meat thermometer registers 140ºF.
  2. In a small saucepan combine apple juice and cinnamon; bring to boiling. Reduce heat and simmer 15 minutes. Remove cinnamon. In a skillet cook celery in butter until tender but not brown. Stir in apple juice, chopped apple, walnuts, raisins and brown sugar; cook over medium heat for 3-5 minutes.
  3. Combine cornstarch and water; stir into the apple mixture. Cook and stir about 2 minutes or until thickened and bubbly. Serve with ham.
