Apple Pancakes
Apples in - not on pancakes, what a combination !!

Ingredients
  1. Flour, A.P., sifted 2 cups
  2. Sugar, granulated 2 Tbsp.
  3. Baking powder 4 tsp.
  4. Salt 1 tsp.
  5. Eggs yolks, beaten 2 each
  6. Milk, fresh 2 cups
  7. Butter, melted 2 Tbsp.
  8. Apple, fresh, peeled, fine diced 1 cup
  9. Egg whites, stiff beaten 2 each
Instructions
  1. Sift together dry ingredients. combine egg yolks and milk. Pour into dry ingredients; stir well.
  2. 2. Stir in apples and butter. Fold in stiff egg whites. let stand for 5 minutes
  3. 3. Pour on to a hot griddle.
Notes
  1. Note: 2 cups of buttermilk may be substituted for the fresh milk.
