Amish Potato Salad

Ingredients
  1. Potatoes 6 Medium
  2. Onion, fine diced 1 small
  3. Celery, fine diced 1 cup
  4. Celery seed 1/2 tsp.
  5. Salt 1 tsp.
  6. Boiled eggs diced 5 each
  7. Dressing
  8. Eggs, well beaten 2 each
  9. Sugar or splenda 3/4 cup
  10. Cornstarch 1 tsp.
  11. Apple cider vinegar 1/3 cup
  12. Salt and pepper to taste
  13. Milk 1/2 cup
  14. Yellow mustard 1 tsp.
  15. Butter softened 3 Tbsp.
  16. Mayonnaise 1 cup
Instructions
  1. Peel and dice potatoes, cook and chill. Add above ingredients on top of potatoes, do not stir.
  2. Combine above ingredients, cook until thickened and smooth.
  3. Add butter. Cover the egg mixture only, with wax paper or clear wrap, chill for 20-25 minutes.
  4. Blend mayonnaise with cooked egg mixture, chill.
  5. Place chilled mayonnaise base over potatoes, mix gently, only until mixed. Garnished as desired.
Notes
  1. Options
  2. 3 oz cooked bacon may be added in step 5.
  3. 1 Tbsp. Dry ranch dressing mix may be added in step 4.
  4. ½ cup sour cream may be substituted for ½ of the mayonnaise.
