Ingredients
- 6 medium tomatoes, wedged
- 4 scallions, chopped
- 1 small sweet onion, sliced
- 2 tablespoons chopped cilantro
- 1 teaspoon mint
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 1 garlic clove, crushed
- salt and pepper
- pita wedges
Instructions
- Combine tomatoes, scallions, onion, cilantro and mint.
- Whisk together oil, lemon juice, garlic, salt and pepper.
- Pour dressing over tomato mixture. Cover and chill. Serve with pita wedges.
- Alternatively, this salad makes a great topping for pita stuffed with felafel.
