Tomato and Onion Salad

Ingredients
  1. 6 medium tomatoes, wedged
  2. 4 scallions, chopped
  3. 1 small sweet onion, sliced
  4. 2 tablespoons chopped cilantro
  5. 1 teaspoon mint
  6. 1/4 cup olive oil
  7. 3 tablespoons lemon juice
  8. 1 garlic clove, crushed
  9. salt and pepper
  10. pita wedges
Instructions
  1. Combine tomatoes, scallions, onion, cilantro and mint.
  2. Whisk together oil, lemon juice, garlic, salt and pepper.
  3. Pour dressing over tomato mixture. Cover and chill. Serve with pita wedges.
  4. Alternatively, this salad makes a great topping for pita stuffed with felafel.
