Carrot Salad
Adding fruit, nuts and raisins make this dish delightful!

Ingredients
  1. 4 medium carrots, washed, peeled and grated
  2. 2 tablespoons reduced-calorie mayonnaise
  3. 2 tablespoons plain low-fat yogurt
  4. orange juice
ANY TWO OF THESE
  1. raisins
  2. grapes
  3. pineapple chunks
  4. cut-up cucumber
  5. orange sections
Instructions
  1. Mix mayonnaise and yogurt; thin dressing with about 2 tablespoons juice. Grate carrots; mix with dressing and your choice of remaining ingredients.
