Banana Muffins
This is a very moist, old fashion style muffin.
  1. Orange juice 1/2 cup
  2. Eggs, large 2 each
  3. Salad oil 1/2 cup
  4. Bananas, over-ripe, mashed 3 each
  5. A. P. flour 1-1/2 cups
  6. Baking Soda 1 tsp.
  7. Brown sugar 1-1/2 cups
  8. Cinnamon 2 tsp
  9. Salt 3/4 tsp.
  10. Pecan or walnuts, pieces(optional) 3/4 cup
  1. Preheat oven to 350F. Spray muffin pans.
  2. Combine orange juice, eggs, salad oil and bananas, mix until well blended.
  3. Combine flour, baking soda, brown sugar, cinnamon and salt, mix until well blended.
  4. Combine the flour mixture to banana mixture, do not over mix.
  5. Drop batter 3/4 full in muffin pan, bake for 18-20 minutes or until firm to the touch.
  1. Note: Remove the muffins from the pan, shortly after they come out of the oven, or the will sweat.
