Japanese Fruit Pie
A wonderful pie using ingredients most cooks already have in their kitchens.

  1. 1 stick unsalted butter, softened
  2. 1 cup white sugar
  3. 2 eggs
  4. ½ cup pecans, chopped
  5. ½ cup raisins
  6. ½ cup shredded coconut
  7. 1 teaspoon vinegar
  8. 1 refrigerated pie crust (or you can make one from scratch)
  1. Cream butter and sugar together in a medium bowl. Add eggs, mix well.
  2. Add pecans, raisins, coconut, and vinegar; stir until well combined.
  3. Unroll pie crust and place in a 9-inch pie plate; flute edges as desired. Pour pie mixture into pie shell.
  4. Bake in a preheated 350 degree Fahrenheit oven for 45 minutes.

    This sounds like an easy pie. I’m allergic to raisins, that’s easy, I’ll sub dried cranberries; what can I sub for the vinegar?

      You can leave it out or use 1/2 tsp of vanilla. The vinegar cuts the sugar some.
